Raw "Soup"er Spirulina Gazpacho

 

Ingredients:

  • 4 medium bok choy
  • 2 stalks celery or ½ a bulb of fennel when in season
  • ½ cup of chopped parsley
  • 4 baby yellow tomatoes or grape tomatoes
  • 1 chunk of ginger chopped – approx. 1½ inches
  • 2 cloves garlic
  • 2 teaspoons spirulina
  • 1 tablespoon olive oil
  • 2 cups water sea salt
  • Juice of ½ lime ( optional)

Blend all ingredients and eat/drink. A very pleasant flavored blend for hot summer evenings.
