MIGHTY MICROGREENS

A report in the Journal of Agricultural and Food Chemistry revealed that many edible seedlings of green veggies and herbs are actually more nutrient-rich than their mature counterparts. Microgreens were found to have higher levels of health-promoting vitamins and carotenoids, compared to mature vegetables. Of the 25 different microgreens analysed, red cabbage microgreens came out top for vitamin C content, and green daikon radish microgreens were the richest in vitamin E.  Using a variety of microgreens in your diet is a perfect way to add valuable nutrients, colour and taste to salads, sandwiches and other meals.
