Extra training and the cooler weather brings on an appetite! Making healthy choices habitual takes preparation and creativity!
This morning I had the munchies and recalled my stock of roasted pumpkin pieces & sweet potato from the night before (great to have on hand as a side dish, once cooked they will stay fresh for up to 3 days in a refrigerated airtight container). I grabbed a couple of each topped them with goats curd and home roasted mixed nuts and sesame seeds, my mini me's loves them too!
Ingredients:
- 1/4 Roasted Pumpkin (I love butternut)
- 1 large sweet potatoe
- 1 tblspn Coconut oil to bake the pumpkin and sweet potato in
- 1 cup mixed nuts roasted for approx 10 minutes in a pre heated 200 degree fan forced oven
- 1 tblspn sesame seeds roasted off in a dry heat fry pan for approx 5 minutes over a low heat , keep them moving as they burn easily
