Single Parent's Meal Prep Routine

Life gets busy, we get tired and often prefer to be doing other things over prepping food every meal time, leading to poor eating habits and food choices.
As a single parent who likes to stay healthy, fit and squeeze a lot into my day; preparation and organisation is key!
This week I thought I'd share one of my winter food prep tips: Pre roast an assortment of root vegetables, store in the fridge for up to 3 days. I like to eat them hot or cold with chicken, in a salad or with fish or served with a side of hummus or goats curd. Quick easy snack or meal.
To ensure I get my greens I slightly steam off a branch of broccoli cut into pieces, flavour with fresh garlic and chilli.
Ingredients:
- Turnip
- Parsnip
- Sweet Potatoe
- Beetroot
- Swede
- Taro
- Carrots
- Broccoli
- Garlic
- Chilli
- Coconut oil
Optional salad pieces that I love to team up with my vegetables:
- Baby Tomatoes
- Sunflower sprouts
- Snow peas
- Capsicum
- Cucumber
Method:
Baked Root Veg
- Grease baking tray with coconut oil
- Peeling root veg is optional I buy organic and prefer to wash well and keep skin on!
- Toss diced veg onto baking tray season with pepper, crystal sea salt, garlic and chilli - optional
- Bake for 25-30min on fan force 220 degrees
- Allow to cool and store in air tight containers
Steamed Brocoli
- Chop broccoli into bite size pieces
- Steam for 1 min to slightly soften - keep as much crunch as possible!
- Toss in chilli, gar;lic and a dash of coconut oil
- Allow to cool and store in air tight container
