The team at the University of Otago, New Zealand, set out to investigate if consuming raw vegetables has an impact, considered on the mental health of young adults living in New Zealand and the United States. The results are striking. The researchers found that consuming raw fruit and vegetables was associated with higher positive mood, higher life satisfaction, and fewer depressive symptoms. They examined women aged 70 and over and found that those who ate three or more portions of greens a day had much healthier blood vessels, which means they are less likely to suffer a stroke.
