PALEO COCONUT BANANA MUFFINS

+150g almond meal100g quinoa flour flour

+2 tsp gluten free baking powder

+125g coconut oil melted

+80ml coconut milk
 
+1 tsp ground cinnamon
 
+1/2 tsp nutmeg
 
+2 tbs LSA
 
+4 eggs lightly beaten
 
+1 cup shredded coconut
 
+3 ripe bananas mashed
 
 
Makes 12 depending on the size of your muffin/ doughnut molds.
 
Packed full of goodness these super easy doughnuts can be made in muffin trays if you don't have doughnut moulds. Loaded with protein, fibre and slow releasing energy these make the perfect on the go snack.
 
Preheat oven to 170C. I used a silicone mould for mine however you could just line some muffin trays. 
 
Combine wet ingredients with mashed banana in a bowl.
 
In a separate bowl combine the dry ingredients. 
 
Slowly mix the two together 
 
Bake for 25 mins until golden and cooked through. 
 
For extra goodness: Add half a cup of chopped walnuts.
