What's the hype about raw foods?
Some raw foodies, go so far as not consuming anything that has been stirred or blended in fear of this process heating the foods, so what’s all the hype about? Why would anyone want to eat this way?
It’s said that when we cook or heat a food, we are destroying the nutrients, vitamins and minerals present, and disabling the naturally occurring enzymes present that help us digest the food.
How cooking transforms the properties of food?
Heating food has the additional downside of transforming into acidic toxins, which can be very damaging to our health.
Noosa Local, Scott Mathias, digestive health specialist, raw food educator, founder of iLifeFoods and author of soon to be released “Let’s Eat Raw”, says that when food is cooked, the molecular structure of the food changes. “The intermolecular bonds break down causing it to lose texture, colour and nutritional value. Proteins begin to be less effective and beneficial to the body. Carbohydrates (natural sugars) are leached away and flavours dissipate. Much of your food’s nutrients are therefore lost or compromised when cooked”, Mathias says.
